Quick and Easy Dinner – Breakfast Burritos

January is hard.  The Christmas cookies are gone, everyone is grumpy from all the kale, the kids are crazy from being locked up inside, and on top of all of that you have to think of something to make for dinner.  Not to worry, I have a quick and easy dinner idea and recipe to save the day – Breakfast Burritos!

If you think that chef’s never run out of ideas of what to cook you are sorely mistaken.  I have had my fare share of moments staring at the fridge while the kids meltdown around me and having zero inspiration.  Zero.  But usually Little Chef comes zooming in and starts hauling stuff out of the fridge and tossing it on the counter like some speed round of Chopped where there are no rules.  He has a compulsive need to be as in-the-way as possible the second the fridge opens.  It must have some alarm somewhere that I can’t hear.  Lightning fast there he is pushing you out of the way going ‘Hmmm, Ohhhh how-a-bouuuut… THIS ONE!”  And holds whatever he found up with wacky crazy arms that somehow always spill.  (How do they spill everything they hold?  How??) Like today.  He hauled out eggs, tortillas, and beer.  That actually seemed like exactly the ticket.  So I drank the beer, and we made breakfast burritos for dinner.  Because sometimes you just need breakfast for dinner.

Luckily we did have a bunch of fresh veggies in the fridge to make this a healthy meal, it is still January after all.

Breakfast Burritos (Serves 4)

Ingredients:

1 small head of lettuce

1 red pepper

2 roma tomatoes

1/4 cup fresh cilantro

1/2 cup grated cheese

4 eggs

1/4 cup milk

1 Tablespoon butter

4 breakfast sausages

Tortilla shells

Sauces: hot sauce, mayo, sour cream, salsa

Directions:

Chop the lettuce, and dice the red pepper and tomatoes.  Crack the eggs in to a bowl, add the milk and whisk.  Get a pan warm on the stove, add the butter and the egg mixture.  Keep on medium heat stirring frequently until eggs are fully cooked and fluffy.  In a separate pan cook the breakfast sausages (you can chop them up or keep them whole).

Put all the finished ingredients on the table and let your family build their own!  (I told you it was easy.)

I would also suggest some amazing condiments.  We put Chimmi’s Mayo on ours and daaaaaaaaamn it was good.  That mayo is my new condiment of choice.  I put that shit on everything!
