Blueberry Dumplings

Last week we asked for some recipe suggestions from all of our blog followers and we had so many fun responses!  Because we had so many responses I decided to do more than one of the recipes.  Last night I made Blueberry Dumplings.  I have to admit it was my first time and I had not even heard of them before.  But I am sure glad I made them.  They were delicious, and we just finished off the last of them for breakfast.  So here is the step by step recipe for you to follow along with.  I hope you try and enjoy them as much as we did.

Blueberry Dumplings Recipe:

3 cups whole blueberries

1/4 cup water

1/4 cup sugar

1 tsp ground cardamon

1 teaspoon vanilla extract

the juice of half a lemon

1. Place blueberries, water, spices, lemon juice and sugar in a large pot or casserole dish with a tight fitting lid.  Mix together with a spoon and cover with lid.  Place in the oven set to 350 degrees F.  Set the timer for 35 minutes and leave them to steam and cook.  

2. While the blueberries cook start the dough for the dumplings.

2.5 cups sugar

2 teaspoons baking powder

1 cup milk

1.4 cup butter

1 teaspoon salt

1 Tablespoon raw course ground sugar

3. In a mixing bowl mix flour, baking powder and salt.  Set aside.  In a small sauce-pot heat up the milk and butter until the butter is fully melted.  Do not mix batter dough until you are sure the blueberries are finished cooking.

4.  When the blueberry mixture is bubbling and the blueberries are soft and surrounded by a fair amount of liquid you can start mixing the batter.  Keep the blueberries in the oven covered while you mix, and do not open the lid again until you are ready to drop the dough in.

5.  Add the milk and butter mixture to the flour mixture and lightly bring together with a fork.  The batter should be sticky and lumpy, do not over mix.  Drop Tablespoon size lumps of the batter into the blueberry mixture and then immediately cover again and return to the oven.

6.  Set a timer for 15 minutes and let the dumplings cook and steam.  Do not open the lid to check them until the timer is done.  After 15 minutes remove from oven and check that the dumplings puffed up and cut one down the centre to make sure the dough is cooked all the way through.  Sprinkle the raw sugar over the top of the dumplings and let cool for a few minutes before serving.

7.  Blueberry dumplings are best served warm, and within an hour or so of baking.  They do hold overnight in the fridge, but the dough becomes more dense.  

I had lots of help making these from Little chef who of course had to be wearing his new batman costume.  He calls himself “Super Batman Johnny” now and runs around saving the world.  It is quite possibly one of the cutest things I have seen.  His imagination has really flourished lately and it is very exciting to watch.
