Better Butter Chicken

Butter chicken and naan bread are a staple dinner in our home. There is something magical about the blend of spices, the creaminess, and of course the fluffy buttery garlic naan (that may be my favorite part). Recently we found a way to make it even better, with the addition of a new product by some very cool chicks, from Bone to Broth. They have made a legit bone broth that has real ingredients, is not salty, and is a seriously good addition to so many dishes. It is used for making bone broth for drinking or adding to soups, but the way I have been using it is to add to sauces and dishes to give them a serious flavour elevation.

The kids joined in on the fun, and dumped a major amount of flour over the entire house. That is fairly standard issue by now. Little Chef de Partie is still too small for food, and part way through us happily cooking we looked over and she was passed out in the excercauser like a champ. (This child is so chill, thank goodness. I was recently asked if 3 kids was too much… And I replied with all honesty that I now think the perfect amount of kids is 2.5, but that’s not an option so here we are! Slightly overwhelmed but making it work. Good thing they are cute.)

As a family we have been making this recipe for years, and adding the Bone to Broth boullon gave it a much deeper flavour that we noticed right away. You can find it HERE

Better Butter Chicken Recipe:

Ingredients:

1 yellow onion, fine dice

2tsp oregano

2tsp cinnamon, ground

1tsp red chili flake

2tsp ground ginger

2tsp tumeric, ground

1tbsp corriander seed, ground

2tsp chili powder

2tsp Basil, dried

2tsp onion powder

1tbsp garlic powder

2tsp mustard, ground

1 lemon, juiced

2tbsp garlic, minced

1tsp Bone to Broth Chicken bouillon

2tsp cider vinegar

3 200g chicken breast, fresh, medium dice (3/4″x 3/4″x 3/4″)

1 1/2 cup garlic tomato sauce

1 cup 2% milk

1 cup heavy cream

5tbsp butter

2tsp paprika

1/4cup mixed cashews and almonds

salt to taste

pepper to taste

3tbsp canola oil

Combine all spiced in a bowl and mix together using a fork. In a sauce pan heat oil over medium high heat. Once the oil it hot add chicken breast and brown on all sides. Once chicken is browned add blended spices and toast in the pan. After spiced become very aromatic and brown add minced garlic and tomato sauce. Allow to simmer for 3-5 minutes. Then add heavy cream and milk. Simmer on low heat 10-12 minutes or until chicken is fully cooked and tender, and sauce has reduced and started to coat the chicken. Season with salt and pepper, add lemon juice and cider vinegar. Taste and adjust seasoning as you see fit.

Using a sharp knife, or the bottom of a small sauce pot, crush deez nuts yo! add to small pan and toast over medium heat, until golden brown and fragrant.

Naan Bread Recipe:

3 cups flour

1.5 cups water

1 Tablespoon yeast

1/4 cup olive oil

1/4 cup butter

2 Tablespoons minced garlic

1 Tablespoon dried parsley

Let yeast bloom in water, then add into mixer with flour and oil. Knead until smooth. Let rise for 1 hour, then roll into small pieces. In a small saucepan melt butter with garlic and parsley. Get a nonstick pan hot and fry breads until golden and puffy. Lay on a sheet pan, and brush with the butter, garlic, parsley mix. Keep warm in the oven until serving.

As you can tell by the photos, this is a great meal to make as a family. And by great I mean, if you enjoy doing double the work and double the mess then this technique is for you. But in all seriousness, cooking with kids does take more time and effort. But in my never to be humble opinion, it is very worth it. Even with my diva Little Sous Chef, a sick Little Chef, and a passed out Little Chef de Partie, plus two other friends thrown in the mix. These are the moments we will remember. Hopefully with good memories, not ones of mom yelling “Don’t dump flour on the dog!”
